Creamy dairy free broccoli soup

A simple soup that's creamy, nutritious and dairy free!




This soup gives you an effortless way to enjoy the many benefits of enjoying a serving of Broccoli in a very tasty way! It is fast and easy to make, dairy, gluten, vegetarian and vegan safe.


Creamy Dairy Free Broccoli Soup

4 cups of broccoli, doesn't have to be fresh can be frozen

2 ripe avocado's

4 Tablespoons of Vegetable Base Better Than Boullion or Chicken Base Better Than Boullion

Enough water to make 3 cups

water to cover broccoli for boiling

1 can of coconut milk full fat, 400ml size

1 Teaspoon of nutmeg

salt and pepper to taste

Directions:

Measure out approximately 4 cups of fresh or frozen chopped broccoli, place in fairly large pot, cover with enough water to just cover the top of the broccoli. Place on stovetop on medium heat and allow to boil until tender. Once broccoli is tender, remove from heat, use a slotted spoon to remove broccoli from water and carefully transfer the water you boiled the broccoli in to a heat safe container, as you will be using it.


If you have a food processor place the broccoli in the food processor, (alternatively you could leave the broccoli and water in the pot and use and immersion blender) add a little bit of the water you have reserved from boiling the broccoli and process until it isn't chunky anymore. Transfer this back to the pot you boiled the broccoli in. Next halve the avocado's remove pits, scoop out the flesh and place in the food processor, process, you will notice it doesn't get completely smooth, add a little of the reserved broccoli water, process again. Take the avocado mixture and add to the pot you boiled the broccoli in.


Take your water that you reserved from boiling the broccoli, add water to it to equal 3 cups of water, then add 4 Tablespoons of Vegetable base Better Than Bouillon, or if you wish Chicken Base Better Than Bouillon. Alternatively you could use a liquid bouillon base. Place the water and bouillon mixture in the microwave for several minutes in a microwave safe glass dish to warm, whisk before adding to pot with broccoli and avocado mixture.

Then add 1 teaspoon of nutmeg,(you may omit this if desired) and 1 can of coconut milk, add salt and pepper to taste. Allow to warm thoroughly and wisk well.

You can serve with a light sprinkle of nutmeg as pictured, if you wish, ENJOY!!
